A delightful balance of sweet strawberries and fluffy cream layered between buttery shortcakes, perfect for summer gatherings.

Ingredients

  • 2 cups sliced strawberries
  • 1/4 cup sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Macerate the strawberries in a bowl with sugar for about 10-15 minutes.
  2. Preheat your oven to 425°F (220°C).
  3. Combine the flour, baking powder, and salt in a large bowl.
  4. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  5. Mix in the heavy cream and vanilla extract until a dough forms.
  6. Shape the dough on a floured surface and roll to about 1-inch thick.
  7. Bake the shortcakes on a baking sheet for 15-20 minutes until golden brown.
  8. Assemble by splitting the shortcakes and layering with macerated strawberries and whipped cream.
