A nostalgic dessert featuring layers of buttery shortcake, sweet macerated strawberries, and luscious whipped cream.

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Macerate the strawberries in a bowl with sugar and let them sit for 30 minutes.
  2. Preheat the oven to 425°F (220°C).
  3. Combine dry ingredients: flour, baking powder, and salt in another bowl.
  4. Cut in the butter until the mixture resembles coarse crumbs.
  5. Mix in heavy cream and vanilla extract until just combined.
  6. Knead the dough gently on a floured surface a few times until it comes together.
  7. Roll out the dough to about 1-inch thick and cut into circles.
  8. Bake the shortcakes on a baking sheet for 15-20 minutes, until golden brown.
  9. Cool the baked shortcakes on a wire rack.
  10. Assemble by splitting the shortcakes, layering with macerated strawberries and whipped cream, then topping with the other halves.
