A delicious and nostalgic strawberry shortcake that combines tender shortcakes with fresh strawberries and whipped cream.

  • 2 cups strawberries, hulled and sliced
  • 1/4 cup sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Macerate the strawberries: In a bowl, combine the strawberries and sugar. Let sit for 30 minutes to macerate, allowing the strawberries to soften and release their juices.
  2. Preheat the oven: While the strawberries are macerating, preheat the oven to 425°F (220°C).
  3. Mix the dry ingredients: In another bowl, mix together the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Combine the wet ingredients: Stir in the heavy cream and vanilla extract until just combined. Be careful not to overmix.
  5. Roll out the dough: Turn the dough onto a floured surface and knead gently, then roll it out to about 1 inch thick and cut into rounds.
  6. Bake the shortcakes: Place the rounds on a baking sheet and bake them for 12-15 minutes or until golden brown.
  7. Assemble the ultimate shortcake: Split the shortcakes in half, layer with macerated strawberries and whipped cream, then top with the other half. Serve immediately.
