A classic strawberry shortcake recipe featuring layers of fresh strawberries, light biscuit-like shortcake, and fluffy whipped cream.

  • 2 cups fresh strawberries, sliced
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Prepare the strawberries by combining the sliced strawberries and granulated sugar in a bowl and letting it sit for about 30 minutes.
  2. Preheat your oven to 425°F (220°C).
  3. Whisk together the flour, baking powder, and salt in another bowl.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Stir in the cream and vanilla extract until just combined.
  6. Knead the dough gently on a floured surface, roll out to about 1-inch thickness, and cut into circles.
  7. Bake the circles on a baking sheet for 15-20 minutes until golden.
  8. Cool the shortcakes and then slice them in half.
  9. Assemble the shortcakes by layering sliced strawberries and whipped cream between and on top.
  10. Serve immediately and enjoy!
