Delightful bite-sized truffles combining fresh strawberries and creamy filling, coated in white chocolate—a perfect summer treat!

Ingredients

  • 1 cup crushed vanilla wafers
  • 1/2 cup powdered sugar
  • 1/2 cup cream cheese, softened
  • 1 cup fresh strawberries, diced
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • Sprinkles or additional crushed vanilla wafers for coating

Instructions

  1. Mix the crushed vanilla wafers, powdered sugar, softened cream cheese, diced strawberries, and vanilla extract until well combined.
  2. Roll the mixture into small balls, about 1 inch in diameter.
  3. Chill the rolled truffles in the refrigerator for about 30 minutes to firm up.
  4. Melt the white chocolate chips in a microwave-safe bowl or a double boiler until smooth.
  5. Dip each truffle into the melted white chocolate, ensuring they’re completely coated.
  6. Set the coated truffles on a baking sheet and refrigerate until the chocolate is set.
