A creamy and tangy strawberry swirl cheesecake that is both visually stunning and delicious, perfect for any celebration.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup fresh strawberries, pureed
  • 2 tablespoons sugar

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese until smooth. Gradually mix in 1 cup sugar and vanilla extract.
  4. Add eggs one at a time, mixing on low speed just until combined.
  5. Gently fold in the sour cream until smooth.
  6. Pour half of the cheesecake batter into the prepared crust.
  7. Mix pureed strawberries with 2 tablespoons of sugar and swirl into the remaining cheesecake batter.
  8. Pour the remaining batter over the first layer and smooth the top.
  9. Bake for 55-60 minutes until the center is set but slightly jiggly.
  10. Turn off the oven and crack the door open, letting the cheesecake cool for 1 hour.
  11. Transfer the cheesecake to the refrigerator and chill for at least 4 hours.
  12. Top with fresh strawberries before serving.

Notes

For best results, use room-temperature cream cheese and eggs. Swirl gently to avoid overmixing and cracking.
