A comforting and versatile dish featuring bell peppers stuffed with ground meat, rice, and aromatic spices, perfect for family meals.

Ingredients

Scale
  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 lb ground beef or turkey
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 1 cup shredded cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) to get it ready for baking those colorful peppers.
  2. Cut the tops off the bell peppers and remove the seeds, creating a cozy pocket for all the delicious stuffing.
  3. Sauté onions and garlic in a skillet until translucent, allowing the flavors to meld and fill your kitchen with a heavenly aroma.
  4. Add the ground meat to the skillet and cook until it’s sufficiently browned, ensuring every bite is packed with flavor.
  5. Mix in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Stir everything together so the flavors unite and create a mouthwatering filling.
  6. Carefully stuff the mixture into each bell pepper, generously filling them to the brim with that savory goodness.
  7. Place your stuffed peppers upright in a baking dish. Sprinkle each one with shredded cheese, making them extra gooey and delicious.
  8. Pour a little water into the bottom of the dish to help steam the peppers, keeping them juicy and tender during baking.
  9. Cover the dish with foil and bake for 30 minutes. Once done, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly, and the peppers are tender.

Notes

If desired, substitute ground meat with mushrooms or lentils for a vegetarian option. Leftovers can be stored for up to three days or frozen for three months.
