Stuffed Bell Peppers are a nostalgic family favorite, combining ground meat, rice, and tomatoes in a colorful pepper for a comforting meal.

Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 can diced tomatoes (14.5 oz)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Sauté onion and garlic until soft. Add ground beef or turkey and cook until browned.
  4. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  5. Stuff the mixture into the bell peppers, packing it in snugly.
  6. Place the peppers upright in a baking dish.
  7. Cover with foil and bake for 25 minutes.
  8. Sprinkle cheese on top (if using) and bake uncovered for an additional 10 minutes.
  9. Serve hot!

Notes

These peppers can be customized with different fillings. Leftovers can be stored for up to 4 days.
