Delicious stuffed bell peppers filled with a savory mix of ground meat, rice, and cheese, perfect for any occasion.

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off of the bell peppers and gently remove the seeds.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking until soft, about 3-4 minutes.
  4. Add the ground beef or turkey to the skillet and cook until browned, about 7-10 minutes.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Spoon the meat and rice mixture into each bell pepper, filling them generously.
  7. If using, sprinkle shredded cheese on top of each stuffed pepper.
  8. Pour a small amount of water into the baking dish and place the stuffed peppers standing upright.
  9. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until tender.
  10. Let the peppers cool for a few minutes before serving warm.
