A delightful fusion of flaky croissants filled with a creamy, cheesy egg mixture enriched with savory sausage, bell peppers, and green onions.

  • 6 large croissants
  • 6 large eggs
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup cooked breakfast sausage or bacon
  • ¼ cup diced bell peppers
  • 2 tablespoons chopped green onions
  • Salt and black pepper to taste
  • 1 tablespoon butter

Instructions

  1. Prepare the croissants by slicing each in half horizontally without cutting all the way through.
  2. Whisk the egg mixture by combining eggs, milk, salt, and pepper in a bowl.
  3. Sauté the filling by melting butter in a skillet and cooking the egg mixture until soft and slightly creamy.
  4. Combine with savory additions by mixing in the sausage or bacon and diced bell peppers.
  5. Stuff the croissants carefully with the egg mixture.
  6. Top with shredded cheese on each stuffed croissant.
  7. Bake in a preheated oven at 350°F (175°C) for about 10–15 minutes.
  8. Cool slightly before serving warm.

Notes

Serve with fresh fruit salad or crispy hash browns for an enjoyable breakfast. Can be made ahead or frozen for later use.
