Delightful stuffed mini peppers filled with a creamy cheese mixture, perfect for gatherings or a light snack.

  • 12 mini bell peppers
  • 8 oz cream cheese, room temperature
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Fresh herbs (e.g., chives or parsley) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully cut the mini bell peppers in half lengthwise and remove the seeds.
  3. In a medium bowl, combine cream cheese, shredded cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Stuff each pepper half generously with the cheese mixture.
  5. Place the stuffed peppers on a baking sheet, ensuring they are held upright.
  6. Slide the baking sheet into the oven and bake for about 15-20 minutes, or until the peppers are tender and the cheese is molten and bubbly.
  7. Once done, garnish with fresh herbs like chives or parsley before serving.

Notes

For extra flavor, add cooked bacon bits or sun-dried tomatoes to the cheese mixture. Can substitute cream cheese with ricotta for a different texture.
