A comforting dish of bell peppers filled with a savory mix of ground beef, rice, and tomatoes, perfect for family dinners.

Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef (or turkey)
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the onion and garlic over medium heat until softened.
  4. Add the ground beef to the skillet, cooking until browned.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Stuff the mixture into each bell pepper.
  7. Place the stuffed peppers in a baking dish and cover with foil. Bake for 30 minutes.
  8. If desired, uncover, sprinkle cheese on top, and bake for an additional 10 minutes.

Notes

Store in an airtight container for up to 3 days, or freeze for up to 3 months. Reheat before serving.
