Delicious stuffed potatoes filled with creamy chicken, Ranch seasoning, and topped with cheese and bacon.

Ingredients

  • 4 large russet potatoes
  • 2 cups cooked shredded chicken
  • 1 packet Ranch seasoning mix
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, chopped
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and pierce them with a fork. Bake for about 45-60 minutes until tender.
  3. Combine the shredded chicken, Ranch seasoning mix, cream cheese, half of the cheddar cheese, bacon, salt, and pepper in a large bowl.
  4. Cut each potato in half and scoop out some flesh to create a cavity.
  5. Spoon the creamy chicken mixture into each potato half, packing it well.
  6. Sprinkle the remaining cheddar cheese over the filled potatoes.
  7. Return the stuffed potatoes to the oven for an additional 15-20 minutes, until heated through.
  8. Garnish the potatoes with freshly sliced green onions before serving.

Notes

These stuffed potatoes are great on their own or served with a salad. Leftovers can be stored in the fridge for up to 3 days.
