Delightful stuffed zucchini boats filled with quinoa, vegetables, and cheese, perfect for a satisfying yet light meal.

Ingredients

  • 4 medium zucchinis
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1/2 cup bell pepper, chopped
  • 1/2 cup onion, diced
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut each zucchini in half lengthwise and scoop out the center.
  3. Heat the olive oil in a skillet over medium heat, add onion and bell pepper, sauté for 5-7 minutes.
  4. Stir in the minced garlic and cherry tomatoes, cooking for another minute.
  5. Remove from heat and mix in the cooked quinoa or rice, seasoning with salt and pepper, and fold in half of the cheese.
  6. Spoon the filling into each zucchini half and top with remaining cheese.
  7. Place in a baking dish and bake for 25-30 minutes.
  8. Garnish with fresh basil before serving.

Notes

These boats can be adapted with different grains and cheeses or even meat for a hearty option. Leftovers can be stored for up to 3 days.
