Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar substitute (like erythritol or stevia)
  • 1 cup cream cheese, softened
  • 1 cup whipped cream
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). In a large bowl, mix together the almond flour, unsweetened cocoa powder, melted butter, and sugar substitute until everything is well combined. Press the mixture evenly into the bottom of a greased 9×9-inch baking dish to form your crust.
  2. Place your crust in the preheated oven and bake for 15 minutes. Once done, remove it and allow it to cool completely.
  3. While the crust cools, grab another bowl to prepare the creamy topping. Beat the softened cream cheese with the vanilla extract until it’s creamy and smooth. Gently fold in the whipped cream, being careful not to deflate this airy mixture.
  4. Spread the cream cheese mixture evenly over your cooled crust.
  5. Toss the unsweetened dark chocolate chips on top of the cream cheese layer.
  6. Cover your creation and refrigerate for at least 120 minutes before slicing into squares.

Notes

Serve chilled and pair with coffee or iced tea. Store leftovers in the fridge for up to one week.
