A cozy and flavorful dish combining chicken with pineapple, soy sauce, and honey, cooked to perfection in a slow cooker.

Ingredients

  • 4 chicken thighs or breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 onion, sliced
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Prepare the chicken by placing it in the slow cooker.
  2. Make the glaze by mixing together the pineapple chunks, soy sauce, brown sugar, honey, minced garlic, and minced ginger in a bowl.
  3. Combine the glaze over the chicken and add the sliced onion.
  4. Season with salt and pepper to taste.
  5. Slow cook covered on low for 6-7 hours or on high for 3-4 hours until the chicken is tender.
  6. Serve with rice or noodles, garnished with green onions if desired.

Notes

For best flavor, marinate chicken in the glaze for a few hours before cooking. Customize with added veggies for extra nutrition.
