A delightful and nutritious breakfast featuring fluffy eggs and crispy bacon nestled in baked sweet potato halves.

Ingredients

  • 2 medium sweet potatoes
  • 4 eggs
  • 4 slices of bacon
  • Salt
  • Pepper
  • Optional toppings (cheese, herbs, etc.)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and poke holes in them, then bake for 45 minutes until tender.
  3. Cook the bacon in a skillet over medium heat until crispy, about 8-10 minutes.
  4. Crack the eggs into a bowl, season with salt and pepper, and whisk until frothy.
  5. Slice the baked sweet potatoes in half and scoop out some flesh to create boats.
  6. Crumble the bacon and mix it with the egg mixture, then fill the sweet potato halves.
  7. Bake the filled boats for an additional 15 minutes or until the eggs are set.
