A colorful and nutritious breakfast hash made with sweet potatoes, bell peppers, onions, and eggs for a fulfilling start to your day.

Ingredients

  • 2 medium sweet potatoes, diced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 eggs
  • Olive oil
  • Salt
  • Pepper
  • Optional: spinach or kale, cooked sausage or bacon

Instructions

  1. Heat the olive oil in your favorite skillet over medium heat until fragrant.
  2. Add the diced sweet potatoes and cook for about 10-15 minutes, stirring occasionally.
  3. Introduce the diced onion and bell pepper, cooking until soft, about 5-7 minutes.
  4. Add the minced garlic and cook for another minute until aromatic.
  5. If desired, stir in cooked sausage or bacon.
  6. Create wells in the hash and crack an egg into each well.
  7. Cover the skillet and cook until the eggs reach your desired doneness.
  8. Season with salt and pepper, and add optional greens before serving.

Notes

Great for meal prep; stores in an airtight container for up to 3 days. Pair with avocado or toast for a complete meal.
