A hearty and nutritious breakfast hash made with sweet potatoes, colorful vegetables, and perfectly poached eggs.

Ingredients

  • 2 medium sweet potatoes, diced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 eggs
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and cook, stirring occasionally, for about 10 minutes until they start to soften.
  3. Toss in the diced bell pepper and onion to the skillet. Cook for an additional 5-7 minutes until tender.
  4. Sprinkle in the paprika, along with salt and pepper to taste. Stir well.
  5. Create small wells in the mixture and gently crack an egg into each well. Cover and cook until eggs are set to your liking, about 4-5 minutes.
  6. Garnish with fresh parsley before serving.

Notes

For a kick, swap paprika for smoked paprika or add a dash of cayenne. This dish is naturally gluten-free.
