  • 2 medium sweet potatoes
  • 4 strips of bacon
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your favorite type)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pierce them with a fork several times.
  3. Rub the sweet potatoes with a drizzle of olive oil and sprinkle with salt.
  4. Place the sweet potatoes on a baking sheet and bake in the preheated oven for 45-60 minutes.
