A hearty and healthy Sweet Potato Frittata perfect for breakfast, brunch, or a light dinner.

Ingredients

  • 2 medium Sweet potatoes
  • 6 Eggs
  • 1/4 cup Milk
  • 1 Onion, chopped
  • 2 cups Spinach
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 tbsp Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into small cubes.
  3. In an oven-safe skillet, heat olive oil over medium heat and add the sweet potatoes and onion. Cook for 8-10 minutes.
  4. Toss in the fresh spinach and sauté until wilted.
  5. In a bowl, whisk together the eggs, milk, salt, and pepper.
  6. Pour the egg mixture over the sweet potato and spinach mixture.
  7. Allow the frittata to cook on the stovetop for 2-3 minutes until edges start to set.
  8. Transfer the skillet to the oven and bake for 15-20 minutes.
  9. Let the frittata cool slightly before slicing and serving.

Notes

Cut sweet potatoes into uniform pieces for even cooking. You can use different greens or add cheese for variations.
