  • 1 cup long-grain rice (uncooked)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup bell peppers, diced
  • 1 onion, diced
  • 2 cups chicken or vegetable broth
  • ½ cup BBQ sauce
  • Garlic powder, paprika, salt, and pepper to taste

Instructions

  1. Brown the smoked sausage in a large skillet over medium heat for about 5-7 minutes until crispy.
  2. Add the diced onion and bell peppers; sauté for an additional 3-4 minutes until softened.
  3. Stir in garlic powder, paprika, salt, and pepper, coating the veggies in spices.
  4. Add uncooked rice, black beans, and corn; stir to combine everything evenly.
  5. Pour in the chicken or vegetable broth and BBQ sauce; mix thoroughly.
  6. Bring the mixture to a boil, allowing flavors to meld.
  7. Reduce heat to low, cover, and let simmer for 20-25 minutes until rice is cooked.
  8. Remove from heat; let sit for 5 minutes before fluffing with a fork.
