A delicious layered dish that combines seasoned ground meat, hearty beans, and gooey cheese, perfect for family dinners.

Ingredients

  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups tortilla chips, crushed
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • Sour cream and salsa for serving

Instructions

  1. Preheat your oven to 350°F (175°C) to set the stage for bubbling cheese and crispy layers.
  2. Brown the ground beef or turkey in a skillet over medium heat until browned. Drain excess fat.
  3. Sauté the chopped onions and bell peppers in the skillet until softened, about 3-4 minutes.
  4. Stir in the black beans, corn, diced tomatoes with green chilies, and taco seasoning. Heat through to meld flavors.
  5. Layer half of the crushed tortilla chips, then half of the meat mixture, and half of the cheese in a baking dish. Repeat with remaining ingredients.
  6. Bake in the preheated oven for 20-25 minutes, until cheese is melted and bubbly.
  7. Serve hot, topped with sour cream and salsa.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
