A comforting one-pot Taco Pasta that combines Mexican flavors with cheesy goodness, perfect for any weeknight meal.

Ingredients

  • 8 oz pasta
  • 1 lb ground beef
  • 1 taco seasoning packet
  • 1 can diced tomatoes (14.5 oz)
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 cups water
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions; drain and set aside to be added later.
  2. Brown the ground beef in a large skillet over medium heat until fully cooked; drain any excess fat.
  3. Add the taco seasoning, diced tomatoes, black beans, corn, and water to the skillet. Stir everything together.
  4. Bring the mixture to a simmer, then add in your cooked pasta.
  5. Mix everything thoroughly and let it cook for another 3-5 minutes, or until heated through.
  6. Stir in the shredded cheese until it melts into a gooey goodness.
  7. Add a pinch of salt and pepper to taste.
  8. Serve hot, garnished with chopped green onions if desired.

Notes

Experiment with toppings like avocado, sour cream, or jalapeños. Store leftovers in an airtight container in the fridge for up to 3 days.
