A creamy and cheesy pasta dish that combines all the vibrant flavors of your favorite tacos.

Ingredients

  • 8 oz pasta
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 cup corn (frozen or canned)
  • 1 cup black beans (drained and rinsed)
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • Chopped green onions and cilantro for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Sauté the ground beef or turkey in a large skillet over medium heat until browned. Drain excess fat.
  3. Add taco seasoning, diced tomatoes, corn, and black beans to the meat. Stir well and let it simmer for 5-7 minutes.
  4. Combine the cooked pasta with the meat mixture. Stir in 1/2 cup of shredded cheese and sour cream.
  5. Melt the remaining cheese on top until everything is melted and gooey.
  6. Garnish with chopped green onions and cilantro before serving.

Notes

For a vegetarian version, replace meat with mushrooms or extra beans. Adjust according to dietary needs, like using gluten-free pasta or dairy-free cheese.
