Taco Stuffed Shells are a delightful fusion of Italian and Mexican cuisines, featuring jumbo pasta shells filled with a flavorful taco mixture and topped with melted cheese.

  • 24 jumbo pasta shells
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, drained
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package instructions until al dente; drain and set aside.
  3. Brown the ground beef or turkey over medium heat and drain excess fat.
  4. Stir in the taco seasoning, salsa, black beans, and corn; mix and cook for 5-7 minutes.
  5. Stuff each pasta shell with the taco mixture and place in a baking dish.
  6. Top with shredded cheese.
  7. Bake for 20 minutes until the cheese is melted and bubbly.
  8. Serve hot, garnished with sour cream and fresh cilantro.
