Delightful taco stuffed sweet potatoes filled with savory meat and vibrant toppings, perfect for a cozy meal.

  • 4 medium sweet potatoes
  • 1 pound ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 packet taco seasoning
  • 1 cup corn, canned or frozen
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Sour cream and green onions for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Poke holes in the sweet potatoes with a fork and bake them in the oven for about 45 minutes or until tender.
  3. Cook the ground beef or turkey in a skillet over medium heat until browned. Drain excess fat if necessary.
  4. Add black beans, taco seasoning, corn, and salsa to the meat mixture and stir well. Cook for an additional 5 minutes until everything is heated through.
  5. Cut the sweet potatoes in half lengthwise and fluff the insides with a fork.
  6. Spoon the taco mixture generously into each sweet potato half.
  7. Top each stuffed potato with shredded cheese and return them to the oven for about 5 minutes, until the cheese is melted.
  8. Serve hot, topped with dollops of sour cream and chopped green onions.

Notes

For even sweetness, use garnet or jewel sweet potatoes. Substitute meat with beans or quinoa for a vegetarian option.
