A comforting dish that combines seasoned beef with a fluffy cornbread topping, perfect for cozy nights and gatherings.

Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup cornbread mix
  • 1/2 cup milk
  • 1 egg
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, brown the ground beef until thoroughly cooked (5-7 minutes) and drain excess fat.
  3. Add the taco seasoning, black beans, corn, and salsa to the skillet, stir to combine and simmer for a few minutes.
  4. In a separate bowl, combine the cornbread mix, milk, and egg, and mix until just combined.
  5. Lightly grease a baking dish with olive oil.
  6. Spoon the beef mixture into the bottom of the greased baking dish, spreading it out evenly.
  7. Pour the cornbread batter evenly over the beef mixture.
  8. Sprinkle shredded cheese on top of the cornbread batter.
  9. Bake for 25-30 minutes or until the cornbread is golden brown and the cheese is bubbly.
  10. Let cool slightly before slicing and serving.

Notes

For added spice, include diced jalapeños in the beef mixture. Leftovers can be reheated in the microwave or oven.
