A comforting Tater Tot Breakfast Casserole combining crispy tater tots, fluffy eggs, and melted cheese for a satisfying meal.

Ingredients

  • Tater tots
  • Eggs
  • Milk
  • Cheddar cheese
  • Cooked sausage or bacon
  • Salt
  • Pepper
  • Onion (optional)
  • Green bell pepper (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the eggs and milk. Season with salt and pepper to taste.
  3. Layer the tater tots on the bottom of a greased baking dish.
  4. Spread the cooked sausage or bacon evenly over the tater tots.
  5. Pour the egg mixture over the top of the sausage and tater tots.
  6. Sprinkle chopped onions and bell peppers over the egg mixture and top with cheddar cheese.
  7. Bake for 30-35 minutes, until the eggs are set and the top is golden brown.
  8. Let the casserole cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can be reheated in the microwave or oven.
