Delicious and easy Teriyaki Chicken Bowls filled with tender chicken, colorful vegetables, and a homemade teriyaki sauce.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken thighs
  • 1/3 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 2 tablespoons cornstarch + 2 tablespoons water (for slurry)
  • 2 cups steamed rice
  • 2 cups chopped vegetables (broccoli, bell peppers, carrots)
  • 2 tablespoons vegetable oil
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, sliced

Instructions

  1. Whisk together soy sauce, water, honey, brown sugar, rice vinegar, sesame oil, minced garlic, and minced ginger in a bowl.
  2. Cut the boneless, skinless chicken thighs into bite-sized pieces.
  3. Heat 1 tablespoon of vegetable oil in a pan and sauté the chicken until browned and cooked through, about 6-8 minutes.
  4. Steam your choice of vegetables until tender and set aside.
  5. Pour the prepared teriyaki sauce over the cooked chicken and stir to coat.
  6. Mix cornstarch with water for a slurry, and add it to the pan to thicken the sauce for about 2 minutes.
  7. Sauté the steamed vegetables in another pan with remaining vegetable oil.
  8. Assemble bowls with a serving of steamed rice topped with teriyaki chicken and vegetables.
  9. Garnish with toasted sesame seeds and sliced green onions before serving.

Notes

Marinate the chicken in teriyaki sauce for extra flavor. Serve with kimchi or cucumber salad.
