  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • 1 ½ cups rolled oats
  • 1 cup chocolate chips
  • ½ cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the all-purpose flour, baking soda, cinnamon, and salt in a separate bowl.
  5. Add the dry mixture to the wet ingredients and stir just until combined.
  6. Fold in the rolled oats, chocolate chips, and chopped pecans, if using.
  7. Scoop spoonfuls of dough onto the prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 10-12 minutes until the edges are golden brown and centers are soft.
  9. Remove from the oven and cool on a wire rack.

Notes

Store cookies in an airtight container. They can be frozen for up to three months.
