A refreshing salad filled with crunchy veggies, shredded chicken, and a creamy peanut dressing.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups mixed greens
  • 1 cup shredded carrots
  • 1 cup red bell pepper, sliced
  • 1/2 cup chopped green onions
  • 1/2 cup chopped cilantro
  • 1/2 cup peanuts, chopped
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Combine the shredded chicken, mixed greens, shredded carrots, sliced red bell pepper, chopped green onions, and cilantro in a large bowl.
  2. Whisk together peanut butter, soy sauce, lime juice, honey, and sesame oil in a small bowl.
  3. Pour the dressing over the salad ingredients and toss gently until coated.
  4. Top the salad with chopped peanuts for extra crunch and serve.

Notes
