Delightful cookies that combine the indulgent flavors of tiramisu with a creamy mascarpone filling.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon espresso powder
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 3 tablespoons powdered sugar
  • Cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, salt, and espresso powder in another bowl.
  5. Combine the dry ingredients with the wet ingredients until just mixed.
  6. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Cool the cookies completely on the baking sheet.
  9. Fluff the mascarpone cheese, heavy cream, and powdered sugar in a separate bowl.
  10. Assemble the cookies by spreading the mascarpone mixture between two cookies.
  11. Dust the tops with cocoa powder before serving.

Notes

Store leftover cookies in an airtight container in the fridge for up to four days.
