A rich and velvety tomato soup enhanced with fresh basil, perfect for chilly evenings.

Ingredients

  • 4 cups Tomatoes, diced
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 4 cups Vegetable broth
  • Salt to taste
  • Pepper to taste
  • 1/4 cup Basil, chopped
  • 1/4 cup Cream (optional)

Instructions

  1. Heat the olive oil in a pot over medium heat.
  2. Sauté the chopped onion and minced garlic until translucent and aromatic, about 3 minutes.
  3. Add the diced tomatoes to the pot and cook for a few minutes.
  4. Pour in the vegetable broth, salt, and pepper to taste.
  5. Simmer the soup for 20 minutes.
  6. Blend the soup until smooth, using an immersion blender if possible.
  7. Stir in the fresh basil and optional cream over low heat.
  8. Serve hot, garnished with basil leaves.

Notes

Pair with a grilled cheese sandwich or a fresh baguette for a complete meal. Leftover soup can be stored in the fridge for up to 4 days or frozen for up to 3 months.
