A vibrant and flavorful rice dish with mango, lime, and coconut that transports you to a tropical paradise.

Ingredients

  • 1 cup Jasmine Rice
  • 1.75 cups Vegetable Broth
  • 0.33 cups Coconut Milk
  • 2 tbsp Fresh Lime Juice
  • Zest of 1 Lime
  • 1 medium Ripe Mango (cubed)
  • 0.25 cups Fresh Cilantro (chopped)
  • 0.5 cups Toasted Coconut Flakes

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. Combine the rinsed rice, vegetable broth, and coconut milk in a saucepan and bring to a boil.
  3. Reduce heat to low, cover the pan, and let it simmer for 18 minutes.
  4. Peel and slice the ripe mango into small, uniform cubes.
  5. Toast the coconut flakes in a dry skillet over medium heat for 2-3 minutes.
  6. Remove the saucepan from heat and let the rice sit covered for 5 minutes.
  7. Fluff the rice gently with a fork.
  8. Fold in the mango, lime juice, lime zest, chopped cilantro, and toasted coconut flakes.
  9. Serve warm or at room temperature.

Notes

Pairs well with grilled shrimp or chicken skewers. Can be served as a side or light main dish.
