Turkey Stuffed Peppers

A classic dish of vibrant bell peppers filled with hearty ground turkey and spices, perfect for family dinners.

Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes (14.5 ounces)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) to ensure it’s hot and ready for baking those delicious peppers.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Sauté the chopped onion and garlic until softened in a skillet.
  4. Add the ground turkey to the skillet and cook until browned.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Spoon the mixture into the hollowed-out peppers and place them snugly in a baking dish.
  7. Sprinkle cheese on top of the stuffed peppers, if desired.
  8. Cover the peppers with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is melted.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 3 months.
