Delicious turkey stuffed bell peppers with a savory filling of ground turkey, rice, and tomatoes, topped with melted cheese.

Ingredients

  • 4 bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting off the tops and removing the seeds.
  3. Sauté the chopped onion and minced garlic in a skillet over medium heat until soft, about 4-5 minutes.
  4. Brown the ground turkey in the skillet until it’s cooked through, about 5-7 minutes.
  5. Combine the cooked rice, diced tomatoes, Italian seasoning, and season with salt and pepper to taste.
  6. Stuff each pepper generously with the turkey mixture.
  7. Add shredded cheese on top of each stuffed pepper.
  8. Bake in the preheated oven for 25-30 minutes until the peppers are tender and the cheese is melted.

Notes

You can customize the filling with different spices or vegetables. Leftovers can be stored in an airtight container for up to 3-4 days.
