Creamy and herb-infused Tuscan butter beans, perfect as a side dish or a hearty main.

Ingredients

  • 2 cups Tuscan butter beans
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt to taste
  • Pepper to taste
  • 1 cup vegetable broth
  • 1 tablespoon lemon juice

Instructions

  1. Rinse the Tuscan butter beans thoroughly under cold running water.
  2. Heat the olive oil in a pan over medium heat.
  3. Sauté the diced onion until translucent, about 5 minutes.
  4. Stir in the minced garlic, thyme, and rosemary, cooking for another minute.
  5. Mix in the butter beans and pour in the vegetable broth.
  6. Reduce heat to low and let it simmer for 15 minutes.
  7. Season with salt and pepper, then stir in the lemon juice.
  8. Transfer the beans to a dish and serve warm.

Notes
