A delightful combination of salmon fillets, cherry tomatoes, and a buttery garlic sauce, evoking the essence of Tuscany.

Ingredients

  • 4 salmon fillets
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh basil for garnish (optional)

Instructions

  1. Melt butter in a large skillet over medium heat until it froths beautifully.
  2. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add cherry tomatoes and Italian seasoning to the skillet, cooking until the tomatoes soften.
  4. Push the tomatoes to the side and place salmon fillets in the skillet.
  5. Cook salmon for about 4-5 minutes on each side or until cooked through.
  6. Add spinach and lemon juice to the skillet; stir until the spinach wilts.
  7. Serve the salmon topped with the tomato and spinach mixture and garnish with fresh basil if desired.

Pat dry your salmon fillets for a perfect sear. Don’t skip the lemon juice; it brightens up the dish!
