A delightful Tuscan-inspired dish featuring salmon, cooked in a creamy butter sauce with garlic, cherry tomatoes, and spinach.

  • 4 salmon fillets
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1/2 cup heavy cream
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Lemon wedges for serving

Instructions

  1. Melt the butter in a large skillet over medium heat until it begins to foam.
  2. Add minced garlic to the pan, cooking just until fragrant and golden.
  3. Cook the halved cherry tomatoes until they begin to soften.
  4. Stir in fresh spinach and allow it to wilt.
  5. Pour in the heavy cream, then sprinkle with Italian seasoning, salt, and pepper.
  6. Place salmon fillets skin-side down into the skillet and cook for about 5 minutes until golden.
  7. Flip the fillets over and cook the other side until the salmon is cooked through, flaky, and tender.
  8. Serve hot, garnished with fresh basil and lemon wedges.
