A quick yet decadent dish featuring flaky salmon fillets in a creamy, garlicky sauce with cherry tomatoes and spinach.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat until it shimmers.
  2. Season your salmon fillets with salt and pepper, and place them in the skillet. Cook for about 4-5 minutes on each side until done. Remove and set aside.
  3. Melt the butter in the same skillet over medium heat.
  4. Add minced garlic and sauté until fragrant, about 1 minute.
  5. Toss in halved cherry tomatoes and cook until they start to burst.
  6. Stir in spinach and Italian seasoning, letting the spinach wilt.
  7. Return the salmon to the skillet and spoon sauce over it.
  8. Finish with a sprinkle of fresh parsley and serve hot.

Notes

Pair with creamy risotto or garlic mashed potatoes for an elevated meal.
