A delightful Tuscan Butter Salmon recipe featuring flaky salmon fillets cooked in a garlicky butter sauce with cherry tomatoes and fresh spinach.

Ingredients

  • 4 salmon fillets
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the salmon fillets generously with salt and pepper.
  3. Sear the salmon fillets skin-side down for about 4-5 minutes until crispy and golden brown.
  4. Flip the salmon fillets and add butter along with the minced garlic; cook for another 3-4 minutes, basting with melted butter.
  5. Add the cherry tomatoes and spinach, sprinkle with Italian seasoning, and cook for 2-3 minutes until the spinach wilts.
  6. Garnish with fresh parsley and serve immediately.

Notes

Leftover salmon can be stored in an airtight container for up to 2 days. Reheat gently to retain tenderness.
