This Tuscan Butter Salmon is a delightful dish featuring salmon in a creamy garlic sauce with juicy cherry tomatoes and vibrant spinach, reminiscent of the enchanting flavors of Tuscany.

Ingredients

  • 4 salmon fillets
  • 1/4 cup butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large skillet over medium heat, melt the butter until it’s bubbly and fragrant.
  2. Add the minced garlic to the melted butter and sauté for about 1 minute.
  3. Toss in the halved cherry tomatoes, cooking for another 2-3 minutes until they soften.
  4. Stir in the spinach leaves into the skillet, allowing them to wilt.
  5. Pour in the heavy cream, stirring to combine with the melted butter and vegetables.
  6. Add the grated Parmesan cheese along with a pinch of salt and pepper.
  7. Push the sauce to the sides of the skillet and carefully place the salmon fillets skin-side down.
  8. Cook the salmon for 4-5 minutes on each side or until it flakes easily.
  9. Garnish your dish with fresh basil just before serving.

Notes

For an extra kick, add a pinch of red pepper flakes when infusing the garlic. Enjoy this dish with rice or mashed potatoes to soak up the sauce.
