A vibrant and flavorful dish with salmon fillets in a rich garlic butter sauce, topped with cherry tomatoes and spinach.

Ingredients

  • 4 salmon fillets
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 tablespoon Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the salmon fillets generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat until it shimmers.
  3. Sear the seasoned salmon fillets for 4-5 minutes on each side until golden and cooked through, then set aside.
  4. Melt the butter in the same skillet over low heat and add the minced garlic, sautéing until fragrant.
  5. Add the halved cherry tomatoes, spinach, and Italian seasoning, cooking until the spinach wilts and tomatoes soften.
  6. Reintroduce the salmon into the skillet, coating each fillet with the sauce, and warm through for a minute.
  7. Garnish with fresh parsley and serve warm.

Notes

Pairs beautifully with garlic mashed potatoes or a light arugula salad. Store leftovers in the refrigerator for up to 2 days.
