  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup blueberries (fresh or frozen)
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Butter for cooking
  • Maple syrup for serving

Instructions

  1. Whip up the blueberry cheesecake filling by mixing together softened cream cheese, powdered sugar, and blueberries until well combined.
  2. Slice the brioche or challah bread into thick slices.
  3. Create a pocket in each slice of bread, gently using a knife to avoid cutting through the edges.
  4. Prepare the egg mixture by whisking together eggs, milk, vanilla extract, and cinnamon.
  5. Coat each stuffed slice of bread in the egg mixture.
  6. Cook the stuffed French toast in a skillet over medium heat until golden brown on both sides.

Notes

Fresh blueberries are ideal for this recipe, but thaw and drain frozen blueberries to avoid excess moisture.
