Instructions
Prepare the French fries by cooking them according to the package instructions or making them from scratch.
Heat up the gravy in a saucepan until steaming hot.
Assemble the fries in a serving dish, piling them high.
Add the cheddar cheese curds on top of the fries.
Pour the hot gravy over the fries and cheese curds.
Melt the butter in a small saucepan over low heat.
Whisk the egg yolks, lemon juice, and Dijon mustard together in a bowl.
Combine the melted butter with the egg mixture while whisking continuously.
Season the sauce with salt and cayenne pepper.
Fry or poach the eggs to your liking.
