Light and airy on the inside, yet crisp and golden on the outside, these beignets are dusted with powdered sugar and infused with rich vanilla flavor.

  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon vanilla extract
  • 4 cups vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  1. Combine dry ingredients: In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Give it a gentle whisk to ensure everything is evenly mixed.
  2. Whisk wet ingredients: In another bowl, whisk together the eggs, milk, and vanilla extract.
  3. Mix together: Pour the whisked wet mixture into the bowl with the dry ingredients. Mix until just combined.
  4. Heat oil: Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C).
  5. Fry the beignets: Using a spoon, drop spoonfuls of the dough into the hot oil, frying them until golden brown, about 2-3 minutes.
  6. Drain and cool: Remove the beignets from the oil and place them on paper towels to drain excess oil.
  7. Dust with sugar: Dust the warm beignets with powdered sugar before serving.

Notes

For best results, use a candy thermometer to ensure the oil is at the right temperature.
