A comforting vegan banana pumpkin bread that perfectly captures the flavors of fall, combining sweet bananas and earthy pumpkin.

Ingredients

  • 3 ripe bananas
  • 1 cup pumpkin puree
  • 1/3 cup melted coconut oil
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan to prepare for the goodness that’s about to come.
  2. Mash the ripe bananas until smooth. The riper they are, the sweeter your bread will be!
  3. Add the pumpkin puree, melted coconut oil, maple syrup, and vanilla extract to the mashed bananas. Mix until well combined.
  4. Whisk together the flour, baking soda, salt, pumpkin spice, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour the batter into the greased loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before slicing and serving.

Notes

Perfectly pairs with spiced chai or coffee. Can be stored at room temperature in an airtight container for up to 3 days.
