A delicious vegan treat that combines nutty almond flour and oats with a fruity filling, perfect for nostalgia and versatility.

  • 1 1/2 cup almond flour
  • 1/4 cup oat flour
  • 1/3 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup berries, fresh or frozen
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a mixing bowl, combine almond flour, oat flour, and salt.
  3. Add maple syrup, melted coconut oil, and vanilla extract to dry ingredients; mix well.
  4. Transfer the mixture to a greased or lined 8×8 baking dish.
  5. Add the berries, maple syrup, and water to a pot.
  6. Heat on low-medium, mashing the berries until large chunks are gone.
  7. Add cornstarch to thicken the berry mixture, simmering on low heat for 5-10 minutes.
  8. Transfer the thickened berry mixture to a bowl, placing it in the fridge.
  9. In a new bowl, mix oats, oat flour, almond flour, and salt; then add melted coconut oil, maple syrup, and vanilla extract.
  10. Remove berry mixture from the fridge and pour it over the base layer.
  11. Top with crumble topping.
  12. Bake for 25 minutes until golden.
  13. Let cool before cutting into squares.

Notes

Serve with vegan yogurt or non-dairy ice cream. Store leftovers in an airtight container for up to 5 days, or freeze for 2 months.
