Delicious vegan brownies made without eggs or dairy, rich and fudgy with a chocolatey flavor.

Ingredients

  • 1 cup brown sugar
  • 1/2 cup melted coconut oil
  • 1/4 cup water or non-dairy milk
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup dairy-free chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. Whisk together the brown sugar, melted coconut oil, and water or non-dairy milk until smooth and creamy.
  3. Combine the all-purpose flour, cocoa powder, baking powder, salt, and vanilla extract into the wet mixture. Mix until just combined.
  4. Fold in the dairy-free chocolate chips if using.
  5. Pour the brownie batter into the prepared baking pan and spread it out evenly.
  6. Bake in the preheated oven for 25-30 minutes until a toothpick comes out clean.
  7. Allow to cool in the pan before cutting into squares.

Notes

Serve with dairy-free ice cream or fresh berries. Store in an airtight container for up to 3 days or freeze for up to 3 months.
